How to make Coq au Vin
Ingredients:
- 2 tbsp butter
- 8 pearl onions
- 41 oz/125 g lean bacon, coarsely chopped
- 4 fresh chicken joints
- 1 garlic clove, finely chopped
- 12 white mushrooms
- 11 cups red wine
- 1 bouquet garni
- 1 tbsp chopped fresh
- tarragon
- salt and pepper
- 2 tsp cornstarch
- chopped fresh flat-leaf parsley, to garnish

How to make:
Melt half of the butter in a large skillet over medium heat. Add the onions and bacon and cook, stirring, for 3 minutes. Lift out the bacon and onions and set aside. Melt the remaining butter in the pan and add the chicken. Cook for 3 minutes, then turn over and cook on the other side for 2 minutes.
Drain off any excess chicken fat. Return the bacon and onions to the pan, then add the garlic, mushrooms, red wine, and herbs.
Season with salt and pepper. Cook for about 1 hour, or until cooked through. Remove from the heat, lift out the chicken, onions, bacon, and mushrooms, transfer them to a serving platter, and keep warm. Discard the bouquet garni.
Mix the cornstarch with 1-2 tablespoons of water, then stir it into the juices in the pan. Bring to a boil, lower the heat, and cook, stirring, for 1 minute. Pour the sauce over the chicken and serve, garnished with parsley.
