How to make Pork Stroganoff
Ingredients:
- 12 oz/350 g lean pork fillet
- 1 tbsp vegetable oil
- 1 medium onion, chopped
- 2 garlic cloves, crushed
- 2 tbsp all-purpose flour
- 2 tbsp tomato paste
- generous 13/4 cups chicken
- or vegetable stock
- 41/2 oz/125 g white mushrooms, sliced
- 1 large green bell pepper, seeded
- ½/2 tsp freshly grated nutmeg, plus extra to garnish
- 4 tbsp lowfat plain yogurt salt and pepper
- boiled rice with chopped fresh parsley, to serve

How to make:
Trim away any excess fat and silver skin from the pork, then cut the meat into 1/2-inch/1-cm thick slices. Heat the vegetable oil in a large, heavy-bottom skillet and gently cook the pork, onion, and garlic for 4-5 minutes, or until lightly browned.
Stir in the flour and tomato paste, then pour in the chicken stock and stir to mix thoroughly. Add the mushrooms, bell pepper, salt and pepper to taste, and nutmeg. Bring to a boil, cover, and let simmer for 20 minutes, or until the pork is tender and cooked through.
Remove the skillet from the heat and stir in the yogurt. Transfer the pork to 4 large, warmed serving plates and serve with boiled rice sprinkled with chopped fresh parsley and an extra spoonful of yogurt, garnished with freshly grated nutmeg.
